PREP 30 minutes ROAST 30 minutes at 350F 2 cups dried macaroni 1 tbsp olive oil 1 medium onion, chopped 1/2 green pepper, chopped 1-2 celery stalks chopped 1 clove garlic 1 lb lean ground beef 1/2 tsp salt 1/2 tsp onion powder fresh ground pepper to taste 28 oz can diced tomatoes 1 tbsp worchestershire sauce 1-2 dashes tobasco (to taste) 1 tsp dried basil 1 tsp dried oregano 1.5 cups grated cheddar | Prepare the macaroni according to package directions. Drain and set aside. In a large, oven-safe pan, saute the vegetables in olive oil on medium heat until softened. Add ground beef and cook until no pink remains. While beef is browning, add salt, onion powder and pepper. Once beef is cooked, add remaining ingredients, except grated cheese. Simmer for 5 minutes, or until flavours well-blended. Remove from heat. Add cooked macaroni to the mixture and gently blend until well mixed. Sprinkle grated cheese on top of the mixture. Bake in a 350 degree oven for 30 minutes. Makes 6 servings. |
